Confetti Mug Cake

March 8, 2025

That pesky sweet tooth always hits with a vengeance when I decide to eat healthy and not get anything sweet that week. And let's face it, my vanilla yogurt won't even take the edge off cravings like these.

This confetti mug cake is the perfect little celebration in a cup that you savor with that closed-eye sigh of joy. It comes together in under five minutes, from grabbing the ingredients to taking that first bite of confetti mug cake.

If you’ve only ever had the hyper-sugary versions, this approach is a total revelation. Whether this is your first pitcher or a staple you have been wanting to refine, it takes all of the guesswork out of this classic. Yielding a smooth, refreshing tea made for lingering a little longer around the table.

"So whether you eat or drink, or whatever you do, do it all for the glory of God. "

1 Corinthians 10:31 NLT

I have found the perfect trick to make this confetti mug cake taste like a boutique bakery birthday cake, and I always have the ingredients in my pantry. Needless to say, it quickly earned its spot as a signature fixture in my kitchen, and you can find me dancing in the kitchen when I remember this cake as that sweet tooth strikes.

This little cake comes together fast without a pile of dishes, and with a few not-so-secret techniques, you can capture that soft, delicious boutique bakery fluff right in your favorite mug.

Notes from the Kitchen

1. Diversify Your Sugar

Dark brown sugar is easily one of my favorite unsung ingredients. Diversifying your sugar in a recipe instantly balances the sweetness, giving you that cozy sweet-tooth fix without being overwhelming. Plus, the natural molasses adds depth of flavor and locks in moisture, so your bakes stay soft without extra liquids.

2. Confetti Throughout, Not Just on Top

Having sprinkles throughout the batter makes every bite feel like a party. They bring all the fun while creating tiny pockets of moisture throughout the cake as it bakes.

Bakeri Tip: Gently fold your sprinkles into the batter at the very end so that the colors stay vibrant, then sprinkle an extra pinch on top  before baking.

3. Steal the Bakery Flavor Secret

To get that high-end boutique bakery birthday cake flavor right in your kitchen, use my secret ingredient: Princess Cake Bakery Emulsion. Using the bakery emulsion alongside your vanilla extract brings that cozy blend of almond, vanilla, and subtle citrus notes that turns a 2-minute cake into a total celebration.

Bakeri Tip: Grab a bottle of my secret ingredient from your local Michael's or Hobby Lobby to keep as a permanent staple in your kitchen drawer.

4. Go Big on the Mug

Don't let the batter fool you! This cake loves to make a grand entrance, so grab a roomy 12 – 16 oz mug and give it space to put on a show. The batter will puff up over the top of the mug before settling, so giving it plenty of room is the key to keeping all that fluffy cake inside your mug.
